"OLD KITCHEN at State Park Unit (left,above) gave way to gleaming new Food Service Building (right, above) in 1962. At left, Head Cook Warren Ducote at Columbia Unit, a former mess sergent at Fort Jackson and a Louisiana Frenchman, sends a sizable spud to join his fellows in the pot. At right, Food Service director Leland E. Crenshaw holds honor award presented State Hospital in 1956 by Institutions Magazine "for superlative achievement in food service and sanitation". With the aid of federal surplus food grants and the hospital's own farm operations raw food costs are held down to 36 cents per patient per day."
