Espagnol became Thomas Jefferson's valet in June 1786, replacing Adrien Petit, who had been promoted to maitre d'hotel. Apparently William Smith had inquired of William Short whether Espagnol would make a good cook for his family, but Short, perhaps at the urging of Jefferson, informed him that Smith would be better served hiring a Parisian with more culinary experience.
